Mauviel professional copper/stainless is substantial cookware after proper seasoning these items should give a lifetime of service even for the most active residential kitchen. Have fun but be careful....Large pieces of Mauviel copper cookware are quite heavy, so if you plan to use them(24L and 30L+ stockpots, 28cm+ saucepans, 28cm+ sautepans, 28cm casserole, 16x13 and 18x16 roasting, 16cm+ round pan, 12qt+ jam pan, and others.) remember to ask for help before you move the cookware. Hot stock, sauces, or meat can ruin your day. Mauviel's quality is second to none but if you cant't find it....call Falk in Belgium.

Put simply, these knives are superior to any other knives I have ever owned and equivalent or better than any others I have tried. I had intended to buy either some Wusthof or Henckels knives and tried them out at a local vendor, then I heard about these knives on [...] so I decided to give them a try. They perform perfectly in my kitchen and I can't believe how amazing they are for the $350 price tag. I especially enjoy the Granton edge as it keeps food from sticking to them. Also, the knife block is more sanitary than simple slotted ones and you can see which knife you are grabbing as opposed to randomly grabbing as knife from the block and getting your Santoku when you wanted your Chef's knife or a paring knife when you wanted a tomato knife. Be sure to buy yourself a nice bamboo cutting board to go with them, as well, as this will keep them sharp for longer.If you're thinking about buying these knives, do yourself a favor and just buy them, you won't regret it!

I bought this set for my significant other at Christmas. I looked around at Wusthof, Global, and a few others but liked the unique look and feel of these better. I also figured these would be more comfortable and easier to wield for a female. The end result is that she really enjoys them. Although she has fairly large hands for a woman, the handles fit her nicely.
The knives come very sharp and hold their edge for a long time. It will be interesting to see how well they take to a professional sharpening. Overall, I am happy that I purchased this set.
There is one caveat. I also do quite a bit of cooking and have large hands. After using the Shuns for a couple of months, I have come to the conclusion that the Wusthof Grand Prixs fit me better and feel sturdier. I cannot really justify having two sets of expensive knives around the house, so we will be keeping the Shuns. My advice: Go to Sur La Table or Williams-Sonoma and handle the knives yourself. Feel the weight, notice the handle shape, and decide what fits you best. There are so many quality manufacturers of cutlery now that it is hard to go wrong with any of the selections.

I've owned this since December 2008 and I still haven't had to sharpen the knife. I usually have to sharpen new knives before I even use them, but not with this one. It came as sharp out of the box as my Watanabe 300mm white steel Yanagi. The knife balances just in front of the handle and is fairly comfortable, but Henckels could use an ergonomics lesson from the shun ken onion line.

The new MV-H series from Masahiro is lighter & sleeker than the older MV series. Masahiro really scored a grand slam when they developed the "modern Japanese grind" (found on all MV & MV-H series blades) - not the traditional Japanese "chisel grind", but a more subtle version of it that is unlike anything ever devised in the western world. The "blade geometry" is far advanced over European & American design concepts. Also, instead of making a dozen or so hideous-looking hollow 'kullens' along the blade to keep food from sticking, centuries ago the Japanese gently hollowed the entire back face of the blade. Masahiro's "modern Japanese grind" has a more subtle version of this. When it comes to blades, it seems that the Japanese people are conceptually gifted. Ordered the 11 piece set sans chef bag. Have a built in knife block so no need. The knifes are very good quality. Bought an Ikea chef knife just to compare and the Saber knifes are noticable higher quality. Only concern was it appeared that someone simply repackaged the knife and chef bag combo, because once I opened the Amazon box, there was a plane box inside with the knifes. The box had no identifying makings, and there was no information on the knifes, or anything that identified the manufacturer. Heck, I at least expected a warantee card. After sleeping on it and doing a little research, I'm willing to bet that someone separated the knife set from the chef bag. I checked on the Saber web site and they don't offer the 11 piece set separate from the bag. Still worth the price, just don't expect anything but the knives.

So, I should start out by saying that I am career cook and have used many brands of knives over the years, even thinking that I had found the perfect knife many times over, but alas, I was mistaken. I had not found the perfect knife until I purchased the Shun Elite Ken Onion 8" Chef's Knife.
I can say without hesitation that it is a knife without peer in my humble opinion. The combination of its style, craftsmanship, endurance and simply fantastic ergonomics makes it my absolute go-to knife no matter if the knife was designed for the job or not (I find myself frustrated with having to use other knives!)
I know the secret to its everlasting sharpness is in the alloy they use to make the knife but I am not a metallurgist, only a cook, yet I can only imagine it must be some alloy from outer space because this knife hasn't lost its killer factory edge since the day I bought it about a year ago. I hone it on a standard steel, about 4 to 5 swipes on each edge at 16 degrees about twice a week, and I use it daily for at least 3 to four hours of continuous use. Still sharp as ever.
Because it looks so gorgeous, owners may be tempted only to bring it out for special occasions, or to inspire a little knife-envy amongst their friends or fellow cooks, but I have to say this knife begs to be used., and you should use it every chance you get. Its look and style communicates a serious statement about the respect for your craft or hobby and the ergonomics of Mr. Onion's design induce no fatigue or burn-out in your wrist or forearm. My hands are of a normal average size for a man and the grip on this knife is stellar. I imagine it's the closest one could get to having a knife custom molded to your hand.
The blade slides effortlessly in a gentle, controlled rhythm whether you're a novice or an experienced cook. As I mentioned, it is seriously sharp, but the sheer design of the knife acts as its own safety feature by preventing any unnecessary force to be put against the blade and aligning the hand to properly secure the knife. The balance between the blade and the handle is superb and the curve of the blade edge makes it perfect for slicing and chopping.
Sure it's a chunk of change, but I would have to say that if you had to only have one knife (and believe me, when you purchase this knife, you'll only need one knife) this would be it. It'll last a lifetime or more with good care and the lifetime warranty and sharpening service offered by Shun.
Do yourself a favor and purchase this knife. You won't regret it one bit.

I got this knife as a kind of impulsive indulgence, I think it looked cool in its own holder and I had heard good things about Shun knives. However, all those good things are true. It is by far the sharpest knife I've owned, and I've got Henckel Zwillings (not the cheapo kind you get at Target) that have been sharpened to what I USED to think was the sharpest blade around.
I'm not dissing the Henckels - if I had not indulged in the Shun I would have been very happy with their performance. But I did get a chance to make some observations on how the Shun shone (no, it's not the same "u" as in "Sun" but it's a borderline pun):
- Ripe tomato: The Shun needed no sawing action whatsoever. It cut the initial waxy and soft skin like it was being dipped in water. All my other knives need to break the skin either with pressure, angle, or a teensy bit of sawing motion
- Dish brush: While cleaning the blade side with a circular motion in sudsy water (safe for sharp knives) I found bits of the brush bristles in the water. Anything that touched the sharp edge was cut, and that has never happened with the best knife I'd had prior to that. I can normally touch a sharp blade without cutting myself, I am not going to try that with the Shun.
- Tortilla stack: I make chips out of 8" flour tortillas by taking a thick stack and chopping it into diamonds or strips, then frying. I've always had to get over the knife and press it in because the multiple layers (20) would slow down the blade. Or I'd work in batches of 6-8. With this knife, I cut the whole 20-thick stack with less pressure than I've used for half that many.
- Potato - while hardly a test for a knife (anything cuts potato) the slicing was awesome. After cutting into the potato, it felt like the Shun DREW the potato into itself and the potato came apart like it was already sliced. If you've ever held a potato in your hand and expected to re-position your hand after you're halfway through, DON'T do it with this knife. It will be cutting into your hand before you even realize it.
If anything got close to cutting like a lightsaber, this would be it. I kid you not. I wonder how long the sharpness lasts, but I'm enjoying it while it's there.
About the Ken Onion design - those used to the generous handle on Henckels might find the handle appearing to be a bit short (I have big hands) but that's until you find the thumb and forefinger position that fits almost over the blade. However, once you hold it, you realize it gives you an added cutting advantage. My only complaint is that the advantage is wasted. You'd have to wait till the blade goes blunt before the handle's design can actually help you cut better.
Did I mention I'm extremely happy with it? Happy indulging.

This knife was a birthday gift from my husband who tends to buy things because they look "cool" and not necessarily because they are the best at what they do. Let's just say I opened this knife up and thought, "HOLY COW, Now that's a knife!"

Here are my observations after several months of use:

The substantial blade is razor sharp-and has stayed that way. It slices through tomatoes and london broil like a hot blade through butter-no "sawing" motion required. I typically have a knife for each job around the kitchen, but this knife does the job of several, quite easily.

I was initially surprised how well the handle fit in my hand. The handle has grooves where you fingers rest, and I thought that perhaps they would feel oddly placed, as my hands are quite small. This wasn't a problem... and the knife felt very natural.

I did a little research, and read that the design of this handle is unique in that it places your hand in "the perfect position in relation to the blade for less effort and fatigue." Hmmm... I don't know if I have ever felt "fatigue" while using my other knives, but I do see now how I was never holding the handle properly,forcing the knife with pressure to cut, chop and slice. Knife-science...who knew?!?!

I find that my other knives are getting little use in my kitchen. I reach for this knife again and again.

I'm hinting to my husband that another knife in this line would make a great Christmas gift.

I bought these knives based on others experience with the global brand cutting knives. I was not disappointed. This is a great value and these really are great knives. I'm a female so these knives fit perfectly in my hand (not sure how it would be for males). They are lightweight and makes cutting quick and fun. These knives meet form and function. Beautiful and fuctional. I hope to have them for years to come. Highly recommend.

these knives are a joke.... for $350 you can do much better. sharp as a scalpel??? lol. not with an HRC of 66. i have butter knives with a higher hardness rating. even worse is that williams sonoma is peddling "true" damascus henckels baldes on their site which is a total crock. for $1000 i can custom order a much better blade hand made with a handle made of whatever i want.
your money would be better spent elsewhere.... just do a search for "japanese chef knives" and go from there. don't waste your money on this trash.

I purchased this knife and the 5-inch petty knife, both about a year-and-a-half ago. I use one or the other daily, depending upon the sizes of the cutting task. Both of these knives are fun to use: light, well-balanced, and extremely sharp. The fit and finish is excellent, as you would expect from Henckels, and the blade is what you would expect from a Japanese knife made in Seki, Japan. Every night, when I am cutting up vegetables or (thawed) meat for dinner, these knives put a smile on my face. They are simply fun to use.
While these knives are not for everything (I keep a heavy German knife for pineapple, squash, frozen meat, etc.), used properly they are excellent at what they do.

I wanted my knives to have the following characteristics: 1. sharp 2. Lightweight 3. Thin blade. 4. The feel it will last forever.
They are most definately sharp. Very light weight. Thinner blade compared to some German knives. I also got the feeling they would last forever due to the handle being metal too. Other knives you may have to worry about the rivets or deteriorating wood handles.
Handles: I bought these online based on reviews and the pictures here on Amazon. In the pictures I thought the black dots may have been some kind of rubber for grip. I wasn't too keen of the thought of potentially having little pieces of rubber glued to the knife. I ordered this set anyway and was pleasantly surprised that the dots are just colored dimples like a golf ball.
Utility knife grip: Looking at the picture of the utility knife I was worried about the grip because the handle looks a little different. I immediately washed this knife upon receiving it and used it to chop up some veggies. I found it very comfortable to use. No concerns with the grip at all.
My set was out of the box sharp and I was chopping things up effortlessly. There really is a "wow" factor if you've only experienced cheap knives from your local *mart stores.
