I bought this set for my significant other at Christmas. I looked around at Wusthof, Global, and a few others but liked the unique look and feel of these better. I also figured these would be more comfortable and easier to wield for a female. The end result is that she really enjoys them. Although she has fairly large hands for a woman, the handles fit her nicely.
The knives come very sharp and hold their edge for a long time. It will be interesting to see how well they take to a professional sharpening. Overall, I am happy that I purchased this set.
There is one caveat. I also do quite a bit of cooking and have large hands. After using the Shuns for a couple of months, I have come to the conclusion that the Wusthof Grand Prixs fit me better and feel sturdier. I cannot really justify having two sets of expensive knives around the house, so we will be keeping the Shuns. My advice: Go to Sur La Table or Williams-Sonoma and handle the knives yourself. Feel the weight, notice the handle shape, and decide what fits you best. There are so many quality manufacturers of cutlery now that it is hard to go wrong with any of the selections.

Shun makes the best kitchen knives I have ever owned, bar none. They all come with a razor sharp edge right out of the box and are easy to re-hone with just a few strokes on a steel (well worth purchasing to accompany this knife). The damascus pattern is gorgeous and the perfectly crafted profile slices through darn near anything (food-like anyway) with ease. The weight and balance of this carving knife are perfect and the complementing fork is one of the best I've seen from any brand. the set is designed for right-handed chefs with an ergonomic d-shaped handle that won't twist or slip in your hand. The storage box is classy too. I've had mine for a couple years and have also given three sets as gifts. It's a great product!

these knives are a joke.... for $350 you can do much better. sharp as a scalpel??? lol. not with an HRC of 66. i have butter knives with a higher hardness rating. even worse is that williams sonoma is peddling "true" damascus henckels baldes on their site which is a total crock. for $1000 i can custom order a much better blade hand made with a handle made of whatever i want.
your money would be better spent elsewhere.... just do a search for "japanese chef knives" and go from there. don't waste your money on this trash.
