I learned how to cook at the tender age of ten, thanks to 4-H Home Economics back in the day. From even back then, the need for quality cookware was drilled into me. I've always had the best I could afford (which, for many years, wasn't much - especially during the negative-income days of the college years) and for a long time that meant having one stainless-steel saute pan and one nonstick saute pan. I'd use the stainless when I wanted to create a lovely browned meat and then deglaze the pan with wine or broth. The nonstick pan got pulled out when I was making something more delicate, such as a fish fillet.
This year, my ten-year-old nonstick saute bit the dust. I noted the coating starting to bubble a bit, and I wasn't willing to risk using it any longer. I began my search for a replacement and was led to the Calphalon Unison line. After much research and hemming and hawing, I decided to go with the reasonably-priced 3-qt. saute - the exact size match to my old pan would have been the 4-qt, but I wasn't quite ready to shell out over $200 for a pan yet untried. Now, of course, I wish I had sprung for the slightly larger size.
In short, not only has this pan replaced my trashed nonstick, I have no problem using it in place of my traditional tri-ply stainless much of the time.
It browns meats, but releases foods (and mess!) easily. It goes in the oven. It goes in the dishwasher. The handle is sturdy. There's a helper handle (one reason I vetoed a similar pan during my search) for when you need the extra stability. For dinner tonight, I seared a pork tenderloin on all sides and then put it in the oven to finish. After a quick rinse, the pan went into the dishwasher. Is it any wonder this is my new favorite pan?

This is my benchmark pan. Most of my collection is All-Clad Stainless. Generally speaking, I consider All-clad to be a standard for servicable cookware. Myself as well as many in my extended family have had heaps of junk fraudulently sold as cookware. I cannot believe some of the pathetic things others use. It's cupped, coned, damaged or sticks and heats so unevenly you can see it on the food.
All-Clad on the other hand has nothing to be ashamed of. It is not exactly luxury stuff though. The copper here is mostly a decorative layer -- which is lost on my wife who insists on scrubbing any marks out of it -- in lieu of the stainless layer on that line. This is not like the French copperwares with several millimiters thick copper and a tin or sterling silver lining.
From my experience, All-Clad is All-Clad and the main difference between the various lines is the color of the outside metal. The layers on a 5-layer pan are so thin I doubt they're appreciably different than 3 thicker layers. Whatever -- pick your color and enjoy a consistent, well-made stainless-lined pan. Pick out a Lodge cast iron pan and Le Creuset's enameled iron and you'll have a pan for almost every job. Forget the non-stick -- they're disposable. The pans (All-Clad) are the same but the lining is no better than the multitude. It lasts about a year in my kitchen and then it's toast. That's a shame because a stainless lined pan for the same cost should last a lifetime.

I, too, was contemplating buying All Clad. I bought a piece of All Clad and a piece of Viking. The All Clad is much more flimsy and looks like a toy set compared to the Viking. The All Clad stained from steaming veggies the one time I used the pan. I returned it the next day. I love the Viking. It cooks evenly and cleans-up like brand new. My husband and I gave a set to ourselves for Christmas. We have already added the roasting pan, which is being discontinued. It was on sale and it is absolutely amazing. It is a substantial weight and a perfect size for anything you have to roast. I cannot say enough about this set..If I had to say a drawback, it would be that this cookware cannot sit in a cabinet hidden-you really must hang these

You cannot beat All-Clad in the quality department. After using this pan for a week my family even noticed how my cooking was tastier. This pan does a fantastic job caramelizing meat and veggies. It heats very quickly and evenly. But it also cools very rapidly because the copper is a fantastic conductor of heat and cold. I like the copper core better because of the ease of maintenance. Just a little Barkeeper's Friend and it shines like new. The handle stays cool enough in most applications for me to use it bare handed. The sides are sloped just right to impress your friends with a little food flipping action. I've used it on both electric and gas stoves and was happy with the even heating of both. If you can swing the price you won't regret it.

Picked up this to complement my ever-growing collection of Calphalon tri ply pans. And, like every other pan in this series, I have been very pleased! Sautees, cooks, fries great. The 8" omelette pan is ok for one person, the 10" pan is great for a family. In my opinion, the 12" fry pan is much too large, so this 10" is just right. Additionally, the 3 quart saute pan lid will fit this pan (check my other reviews of the tri-ply series).
To the person who complained that "used it only once and its interior surface has discolored already." I cook regularly on a gas range, and it takes me several weeks before it starts to get discolored. That statement is like the iPod lawsuit of the guy suing Apple for hearing loss- of course your pans will get dirty with usage, it's not magic. Just remember, use Barkeeper's Friend and a Dobie pad (sponge encased in nylon net) to keep the luster!
Lastly, to the person that complained that these are not of the same quality as All-Clad, I don't see what the difference is. Compared with the All-Clad Stainless line, both use the same tri-ply on sides and bottom with aluminum core. The difference is that AC uses a metal that works better on induction ovens (magnetic), albeit is of worse quality than non-magnetic metals.
If you want to pay for overpriced All-Clad, go right ahead- the only one losing is you and your wallet.

I've had these pots and pans for 1.5 years now, and have steadily added to my tri ply collection. I'm still very pleased with them.
- They have still retained their mirror finish on the exterior.
- Cleanup is a breeze- just rub a bit of barkeeper's friend (I'd like to shake the hand of whoever invented that- best thing since sliced bread).
- The moisture channeling from the lids is very much appreciated- everything I cook is definitely juicier.
- I was amazed at the quality of material- I boiled some eggs in a pot one day, and 14 hours later, I kid you not, the water was still warm, not lukewarm, but warm!
The biggest complaint I have about the pots, and the sole complaint that I can think of, is that the handles on the lids do get a bit hot when cooking. Just do yourself a favor and grab a pot-holder when cooking.
Otherwise, I'm still very satisfied with them!

I just received the smaller, 20cm version of this skillet as a gift and am delighted with it. Before, I was always burning butter, omelets, pancackes because the skillet would continue to warm up after I started cooking on my electric stove (yes, I always turn down the temp a little after I start cooking). It was just too hard to tell how hot the skillet was until the food started burning. No problem with this guy - you can watch the skillet temperature rise and fall as you warm it up, add ingredients, or simmer. I'm ordering the 28cm version tonight.
The electronics use a standard AAA battery in the handle. The battery is easy to replace. I was a little worried about how heat might damage the battery, but found that as long as you put the skillet on a burner that's sized for the skillet (or smaller), the handle stays reasonably cool. Heat spreads very evenly across the bottom.
Pros: Very simple to use. Easy to remove the temperature module for washing, dishwasher safe, the display has large, easy to read numbers, the temperature sensor responds very quickly to changes in skillet temperature, the display tells you the ideal temperature for 11 common foods, an alarm will beep if the temperature gets too hot for what you're cooking, and the walls of the skillet are nice and high, and the skillet (remember, I have the 20cm version), while sturdy, is not too heavy. Clear instructions, although you hardly need them for basic operation. Lastly, because food isn't over-cooked, the skillet is easier to clean.
Cons: It would be nice to disable the over-temperature beeper if you know you will be watching the food cook. There was a clear piece of protective shipping plastic I didn't notice on the underside of the handle when I cooked the first time. It shriveled, but didn't burn or stick to the skillet or cause any damage, so just make sure you remove it when you unpack your skillet.
