Calphalon Unison Nonstick Saute Pans Review

I learned how to cook at the tender age of ten, thanks to 4-H Home Economics back in the day. From even back then, the need for quality cookware was drilled into me. I've always had the best I could afford (which, for many years, wasn't much - especially during the negative-income days of the college years) and for a long time that meant having one stainless-steel saute pan and one nonstick saute pan. I'd use the stainless when I wanted to create a lovely browned meat and then deglaze the pan with wine or broth. The nonstick pan got pulled out when I was making something more delicate, such as a fish fillet.
This year, my ten-year-old nonstick saute bit the dust. I noted the coating starting to bubble a bit, and I wasn't willing to risk using it any longer. I began my search for a replacement and was led to the Calphalon Unison line. After much research and hemming and hawing, I decided to go with the reasonably-priced 3-qt. saute - the exact size match to my old pan would have been the 4-qt, but I wasn't quite ready to shell out over $200 for a pan yet untried. Now, of course, I wish I had sprung for the slightly larger size.
In short, not only has this pan replaced my trashed nonstick, I have no problem using it in place of my traditional tri-ply stainless much of the time.
It browns meats, but releases foods (and mess!) easily. It goes in the oven. It goes in the dishwasher. The handle is sturdy. There's a helper handle (one reason I vetoed a similar pan during my search) for when you need the extra stability. For dinner tonight, I seared a pork tenderloin on all sides and then put it in the oven to finish. After a quick rinse, the pan went into the dishwasher. Is it any wonder this is my new favorite pan?

All-Clad Copper-Core Saute Pans Review

All-Clad Copper-Core Saute Pans

Ever since receiving one as a gift, this piece has been the pride and joy of my cookware collection. Having a thick interior layer of copper, the pot is quite heavy, and conducts heat more evenly than the calphalon pan I used to use. The extra money for the copper core is definitely worth it. If I had the money, I'd stock my entire kitchen with this line.
I never worry about things sticking to the bottom of the pot. The trick is to heat the pan on low to medium-low heat for a few minutes before putting oil in the pot, and then letting the oil heat for a few minutes until it begins to smoke.
Stainless steel is much easier to clean than either hard-anodized aluminum or copper. Getting it clean enough to use is a breeze, although personally, I insist on scrouring it until it shines like new simply because I like this pot so much.
Oh, and if you regularly cook for more than 1-2 people, you'll need a bigger version of this pot. I rarely do, and even so, I find this pot to be a little bit on the small side.

Up until now All-Clad's excellent heat conductivity has been a result of an aluminum core. Another metal equally efficient when it comes to conducting heat is copper. All-Clad now has a complete line of copper core stainless steel cookware which uses bonded 5-ply construction to achieve culinary perfection. The copper core is exposed in an attractive band around each piece, adding warmth, color, and authenticity. Unlike pans with an abundance of exposed copper, these pieces clean easily and are lined with durable food-safe stainless steel. The mid-sized saute is perfect for couples and small families as it can saute shrimp and veggies, brown hamburg for a skillet dinner and so on. The lid allows you to simmer and poach upon request.

Kirkland 12 pc. Tri-Ply Clad Stainless Steel Cookware Set Review

Kirkland 12 pc. Tri-Ply Clad Stainless Steel Cookware Set

My daughter has a 13 piece stainless steel cookware set that she purchased a few years ago from Costco, and it is a heavy duty beautiful set. She paid just 199 dollars for her 'made in Italy' stainless cookware set. Hers is the one which has dome shaped pots, and is very heavy and with a mirror finish.
I wanted the same set, but Costco stopped selling the 'made in Italy' set a few years ago, and brought similar sets from Thailand and Brazil, which are quite sub-standard. I was happy when I saw this on Amazon.com, and decided to buy it despite the price since these sets are not out there any more.
I have a couple of Tramontina pieces from [...], and they are equally good as far as cooking goes, and they also have a beautiful mirror finish just like the Kirkland cookware. They both cook evenly, and clean well. The reviews ([...])on the Tramontina cookware are fabulous & they were chosen by Cooks Illustrated as the 'best buy'. The Tramontina pot handles are wider, and much more convenient to handle than the Kirkland ones, especially when the pots are full. Yes, they are not made in Italy, and are made only in China. However, this Kirkland triply quality is no better than the ones made in China. You can buy a Tramontina triply set for less than half the price of this set, and with free shipping from [...]
I have given 4 stars since it is way overpriced and the handles are not as wide and convenient as the Tramontina pots.

Sitram Catering 11.4-Quart Commercial Stainless Steel Rondeau Casserole Review

Sitram Catering 11.4-Quart Commercial Stainless Steel Rondeau Casserole

Perfect for browning, braising and stewing large batches of chicken, pork, lamb or the like. This is a very heavy pot - so that's what makes it great for browning meat (maillard reaction) them simmering it in wine, broth and mire poix (carrots, celery and onion) plus lots of garlic.
This is now my standard "braising and stewing" pot and has replaced my 7.25 quart Le Creuset French Oven. It can take more abuse and is easier to clean. It is much wider and will brown more meat faster.
Granted that with the 13.5 in. cover, this rondeau will put you back about $180, this will pay for itself in only 2 outings with the family is a typical restaurant.
This is my best pot for cooking a large meal for my 3 hungry boys and their friends. I love it.

All-Clad Stainless-Steel Saute Pan Review

All-Clad Stainless-Steel Saute Pan

I own the 3-Quart version of this pan, purchased in a set before I knew better, and have used this 4-Quart. I prefer this one because its taller sides make doing a true sauté (which means "jump" in French) of the ingredients a bit easier. Taller sides like this are what are found in most European sauté pans. The previous review is inaccurate in that both the 3-Quart and 4-Quart All-Clad pans are identical in diameter, which can be verified at All-Clad's web site.
Per All-Clad, the LTD and Master Chef lines use thicker aluminum so if you don't need the ease of maintenence and durability that comes with a stainless-steel exterior, I would suggest you consider these other lines for their more even (i.e. better) heating performance.
Also, there are higher-end cookware lines out there than All-Clad. Don't think that All-Clad is the "best" available. Brands such as Demeyere and Bourgeat have features such as more durable exterior finishes (Demeyere Atlantis, etc.), thicker aluminum cores, more comfortable handles (an All-Clad weakness), and even full copper (more conductive than aluminum). These come at a higher price than All-Clad. On the other hand, there are less-expensive product lines such as Calphalon Commercial (often cheap on Amazon.com!) and brands used in commercial kitchens like Sitram.
Still, this is a nice pan and I don't think you can really go wrong with All-Clad. It's the best commonly available at consumer kitchen shops and easy to order on Amazon.com.

I love All Clad cookware & was in the market to add to my collection. Initially, I wanted to buy the 14" fry pan, a wonderful item. The store owner asked me how I would use the 14" fry pan & I told her I wanted to fry & saute in it. I also mentioned I'd try to use it to braise as well. Given the fact I needed a large pan to serve mulitple purposes, the owner recommended I consider purchasing this 6 qt. saute pan instead. The pan has a diameter as wide as the 14" fry pan, & can be used for frying, sauteing & braising. Additionally, the cover is included in the price of this 6 qt. saute pan, unlike the 14" fry pan, which doesn't come w/a cover. I'm aware of the differences between a fry vs saute vs braising pan, but not being a purist & also wanting to conserve on storage space & cost, I bought this 6 qt saute pan. The store owner was correct, I use this pan all the time & it works perfectly as a fry, saute or braise pan. Given it's an All Clad, it has 1st class performance for heating quickly & evenly, cooking perfectly & cleaning up in a flash. Not to mention its beauty & perfect constuction, along with a lifetime guarantee. Don't hesitate to buy this pan!!!
