I learned how to cook at the tender age of ten, thanks to 4-H Home Economics back in the day. From even back then, the need for quality cookware was drilled into me. I've always had the best I could afford (which, for many years, wasn't much - especially during the negative-income days of the college years) and for a long time that meant having one stainless-steel saute pan and one nonstick saute pan. I'd use the stainless when I wanted to create a lovely browned meat and then deglaze the pan with wine or broth. The nonstick pan got pulled out when I was making something more delicate, such as a fish fillet.
This year, my ten-year-old nonstick saute bit the dust. I noted the coating starting to bubble a bit, and I wasn't willing to risk using it any longer. I began my search for a replacement and was led to the Calphalon Unison line. After much research and hemming and hawing, I decided to go with the reasonably-priced 3-qt. saute - the exact size match to my old pan would have been the 4-qt, but I wasn't quite ready to shell out over $200 for a pan yet untried. Now, of course, I wish I had sprung for the slightly larger size.
In short, not only has this pan replaced my trashed nonstick, I have no problem using it in place of my traditional tri-ply stainless much of the time.
It browns meats, but releases foods (and mess!) easily. It goes in the oven. It goes in the dishwasher. The handle is sturdy. There's a helper handle (one reason I vetoed a similar pan during my search) for when you need the extra stability. For dinner tonight, I seared a pork tenderloin on all sides and then put it in the oven to finish. After a quick rinse, the pan went into the dishwasher. Is it any wonder this is my new favorite pan?

This pot is terrific. It's quite heavy and really sturdy. I've never owned any cookware this nice and I have some good stuff. Please note that this pot comes with a steamer insert. It's a relatively short insert that is meant to be above the level of your boiling liquid.
If you want a pasta pot with an insert that goes all the way down into the liquid then you want Silit 3-3/4-Quart Pasta Pot with Insert, Lemon Green which is actually bigger than Amazon has it listed as and bigger than this pot. Read the helpful review under that product.
I have to say a word about the rims on the Silit pots. It's a rather thick, but smooth edge that pours really well. I have other enamel pots with steel rims that are kind of clunky looking and tend to get dented. This pot has a gorgeous, substantial edge. There is no seam to collect gunk or get in the way.
Even though adds nothing functional - I adore the color. It's very fresh and clean looking. It's a slightly speckled enamel that gets a bit darker towards the base of the pot. I feel happy just seeing it sitting in my cabinet or on my stove. I'm surprised to see such a trendy color on cookware, but it's what caught my eye initially.

I wanted a crepe pan that could handle some heat. No nonstick crepe pan can produce the kind of crepes I'm looking for. This pan, however, becomes practically nonstick after the first coat of butter after heating it up. It cleans up easily and is the best quality and most beautiful copper pan in my collection. I just cooked several courses of crepes: mushroom and brie, yogurt and banana, and nutella and banana. This pan cooks the crepe perfectly.

This cookware is great. We purchased our first set in 1991. Here is the kicker, the company stands behind the product. Just this month, Jan 2010, two of the skillets that are 19 years old started sticking. We sent them back to the company and they set us new ones. It doesn't get any any better than that. I at first thought Coppercore was just a gimmick, with the gratuitous rim of exposed copper around the base, but I was wrong--this line is great: much heavier than their other lines, and, for what it's worth, attractive too. I have, at great expense, gotten two more of their pots.

KitchenAid knows how to build appliances, so its no surprise to see them do such a good job with cookware. As you might have read, these are HEAVY stainless steel cast cookware--tho they arent actually THAT heavy. They're SOLID. On the bottom of these pots and pans, are 3/8's of an inch of SOLID STAINLESS STEEL. If you have a radiant heat stove, with a ceramic top, this type of cookware is perfect for your type of stove. Aluminum and copper bottom pans cause metal marks on ceramic topped stoves. And, if you use lighter versions of steel cookware, the WAY that radiant heat behaves between HIGH and LOW settings, means you will not have a good, continuous heat source under your food. If you cook with gas, you raise or lower the flame, and adjust the heat. If you have electric elements, about half the electric element turns off, for medium heat. Or, just a small part will not turn on, for medium high heat, etc. BUT...radiant heat works like a microwave works when set below HIGH. ITs turning ON, then OFF, then ON, then OFF, etc, when you have medium heat. If you are using low heat, the element turns ON, and then its off for quite awhile, and turns ON again. With cookware that has less steel thickness on the bottom, that CAN be a real problem. However, because of the thickness of the steel here, it heats up, and HOLDS THE HEAT STEADY, while your stove's radiant heat element keeps turning ON, off, ON, off, ON, off, etc. This gives you an EVEN FLOW OF HEAT on your food. IF you are making a butter sauce, saulding milk, or any type of cooking that requires low heat, you know you want even heat, and not a blast of HOT, and then nothing. You'll notice at first, these heavier pans take a little longer to heat up. BUT THEY HOLD THE HEAT NICE AND EVEN. And that is the secret to cooking success on radiant heat. The lighter the pan you use on these stoves, the less success you have cooking between HIGH HEAT settings, and OFF.
This set of cookware would suit a gourmet chief, or anyone who does serious cooking at home. Their design is beautiful, and practical. The lids surface of super high polished stainless steel looks like the reflecting mirror of a telescope. The saucepans and frypans beg to be hung above the stove. Practicality requires it when cooking complex, multi-course meals which demand access to many saucepans and frypans. The handles, including the lid handles, are covered with that new rubberized looking material, that conducts no heat. (So you can forget about potholders, or burning yourself by grabbing a lid handle to check cooking progress, etc. I've lit potholders on fire, or burnt myself forgetting to use them far too often, so I's sold on this stay cool handle/lid coating.) The 8 various pots and pans handle nearly ANY type of cooking method, or food amount, you might throw at it. I estimate you could prepare a Thanksgiving feast for a large family without a problem. You have the 3 saucepans, 3 quart, 2 quart, and 1.5 quart. Then, you have the BIG soup kettle that's an 8 quart, 10 inch wide, 7 inch deep beauty. (On these ceramic topped stoves, you actually CANT USE a kettle much bigger than that, for fear of cracking your stovetop.) Then, you have the two frypans, an 8 inch and a 10 inch version. The only pan that doesnt have a lid that fits over it, is that 8 inch frypan. There's the 11 inch wide stove top wok pan for stir fries, etc. (Its like a wok with a flat bottom.) To top it all off, there's the all purpose super sized pan. Its a 3 quart, 2.5 inch deep, 10 inch wide, "shallow fryer". When you have a recipe calling for 1.5 inches of hot oil for french fries, or tempura, or whatever, that's THIS pan. Because of the pan's weight, there's a great safety feature. You grab this pan by the long extended handle, along with the second "lid-like" handle on the opposite side, and avoid spillage. Since you can easily lift pan and contents from both sides simultaneously, it doesnt drag over the top of your stove. You maintain the pan's level balance, while distributing the weight on both arms. This set's design combines ergonomic considerations with esthetic qualities quite well. The 6 lids fit tightly over the various pans, tho they arent vented. This shouldnt be a problem, as long as you control your cooking heat. When your cooking heat stays in the pan, you save money, and the kitchen stays cooler. But for some, it may take a bit of getting used to, if you presently use vented lids to let steam escape.
I've tested these pans now, and have found no real problems. If you keep your stovetop clean, the pan bottoms will remain clean, and shouldn't oxidize. Teflon doesn't peel or scratch off, so long as you use the proper cooking utensiles. So, let your new pans last, and spend a few bucks on some good, non stick stirring spoons, a ladel, spatula, etc. If you clean teflon cookware with a blue multi-purpose no scratch scrub sponge, and an ounce of common sense, then you wont have anything to complain about. I love teflon, cos for starters, I like to use as little oil to fry food as possible. Beyond that gastronomic consideration, I just HATE SCRUBBING POTS AND PANS CLEAN. You soak these, you wipe them, you're done. I'd recommend this cookware set to anyone who seriouly loves to cook. Especially cooks who hate to clean up, and ESPECIALLY cooks with radiant heat stoves. Picked up this to complement my ever-growing collection of Calphalon tri ply pans. And, like every other pan in this series, I have been very pleased! Sautees, cooks, fries great. The 8" omelette pan is ok for one person, the 10" pan is great for a family. In my opinion, the 12" fry pan is much too large, so this 10" is just right. Additionally, the 3 quart saute pan lid will fit this pan (check my other reviews of the tri-ply series).
To the person who complained that "used it only once and its interior surface has discolored already." I cook regularly on a gas range, and it takes me several weeks before it starts to get discolored. That statement is like the iPod lawsuit of the guy suing Apple for hearing loss- of course your pans will get dirty with usage, it's not magic. Just remember, use Barkeeper's Friend and a Dobie pad (sponge encased in nylon net) to keep the luster!
Lastly, to the person that complained that these are not of the same quality as All-Clad, I don't see what the difference is. Compared with the All-Clad Stainless line, both use the same tri-ply on sides and bottom with aluminum core. The difference is that AC uses a metal that works better on induction ovens (magnetic), albeit is of worse quality than non-magnetic metals.
If you want to pay for overpriced All-Clad, go right ahead- the only one losing is you and your wallet.

I've had these pots and pans for 1.5 years now, and have steadily added to my tri ply collection. I'm still very pleased with them.
- They have still retained their mirror finish on the exterior.
- Cleanup is a breeze- just rub a bit of barkeeper's friend (I'd like to shake the hand of whoever invented that- best thing since sliced bread).
- The moisture channeling from the lids is very much appreciated- everything I cook is definitely juicier.
- I was amazed at the quality of material- I boiled some eggs in a pot one day, and 14 hours later, I kid you not, the water was still warm, not lukewarm, but warm!
The biggest complaint I have about the pots, and the sole complaint that I can think of, is that the handles on the lids do get a bit hot when cooking. Just do yourself a favor and grab a pot-holder when cooking.
Otherwise, I'm still very satisfied with them!
