Some years ago I was a professional chef, and I approach cooking in an analytical way, (cooking is science, plating is art). I learned the real value of slow cooking of some foods, especially in classical cuisine and much of ethnic cooking. The trick is a specialized slow-cook oven (expensive restaurant equipment) or a well-made Dutch oven. Assuming you are not reading this from the kitchen of a three star, the obvious choice is the Dutch oven.
My first really usable Dutch oven was a 50-year-old one, 18 pounds of solid aluminum! Eventually it pitted as to become unsafe. I've tried many of the current crop, and was very disappointed at the uneven heat distribution, with the propensity of food to caramelize and eventually burn at the transition point between the flat bottom and the sides (the metal thickness at this point is critical). In my testing, this pot is far and away the best designed, finished, and certainly the best cooking Dutch oven now being produced.
I purchased this item, and am thoroughly satisfied. The price for this superior "slow cooker" is steep, but if you really know how, and when to use this pot, you will marvel at the results, and it really beats the price tag of the restaurant "slow oven!"
Worth the price, and is in my opinion the best by far of all the offerings, spring for one, then really enjoy classical cuisine as it was once prepared!

All the Copper-Core products are amazing. They are so well built and just plain beautiful. I like this particular pot because it can feed so many folks. It's great for frying too since the sides are high. Best part is I can do it all in one pot, brown and deglaze, add everything and pop it in the oven. I ended up buying about $1,900.00 worth of Copper-Core and have never regretted doing it. I love this pot.

Ever since receiving one as a gift, this piece has been the pride and joy of my cookware collection. Having a thick interior layer of copper, the pot is quite heavy, and conducts heat more evenly than the calphalon pan I used to use. The extra money for the copper core is definitely worth it. If I had the money, I'd stock my entire kitchen with this line.
I never worry about things sticking to the bottom of the pot. The trick is to heat the pan on low to medium-low heat for a few minutes before putting oil in the pot, and then letting the oil heat for a few minutes until it begins to smoke.
Stainless steel is much easier to clean than either hard-anodized aluminum or copper. Getting it clean enough to use is a breeze, although personally, I insist on scrouring it until it shines like new simply because I like this pot so much.
Oh, and if you regularly cook for more than 1-2 people, you'll need a bigger version of this pot. I rarely do, and even so, I find this pot to be a little bit on the small side.

Over the years I have used a variety of cookware--aluminum bottomed stainless Revere Ware, Magnalite Professional, Calphalon, Calphalon Professional NonStick. When I finally had to throw out the last of my tattered collection, I started to look for some stainless cookware that would stand the test of time and offer performance to boot. I decided to splurge on this All-Clad Copper Core.
One of the pieces I recieved was this 1 1/2 Quart saucepan. What a workhorse this one is! Rice to soup to lentils to barely to country gravy, it gets used! The most used of all my Copper Core is this little pot!
Delighted to report that I am THRILLED with this expensive splurge! All-Clad is NOT about expensive hype and status, those these pans are beautifully made, instead they do everything cookware should, and have literally changed the way I cook. Having attended CIA and worked as a professional chef for a few years, I know the golden rule for food not sticking: preheat pan, add oil, let oil heat for 5-10 seconds, then add food. Using these guidelines with the Copper Core, nothing sticks! And I mean for some things, like omelets or fried eggs in the 10" frypan, the performance is as good as my brand new Calphalon NonStick was; when you can just slide omelets and fried eggs out of the pan without ANY sticking at all, why would you ever need Nonstick or Teflon based products?!
However, these pans are also superbly capable of developing a fond on the pan bottom for deglazing and subsequent sauces; in fact I have had them give every last bit of the fond up when deglazed, almost cleaning the pan for me! That's the best thing about them--they do everything right. I am not sure if it's All-Clad propriety stainless "recipe" or what, but these pans are so amazing to be able to function on all levels from eggs sliding out with ZILCH sticking to chicken [...] sticking just enough to develop rich fond for complete deglazing, to the light and glazy fond from sauteed onions and garlic for developing a richer risotto when deglazed with wine.
Mind you, this is partly about knowing some basic cooking principles, and these pans might not act so obligingly in non experienced hands, because when I read about people commenting on how everything sticks in their All-Clad stainless interior, I know it isn't All-Clad's fault, believe me!
I have found the copper core very responsive and quick to adjust to temperature. Perhaps not as great as true copper pot and pans, but noticeably better than aluminum cores (Stainless line) or anodized aluminum (Magnalite Pro/Calphalon). These pans heat up and boil water faster than anything I have ever used, aside from true copper cookware, and when turning the heat down, or removing from burner, they also cool incredibly quickly. It's nice to have semi-copper performance with the ease of stainless steel clean-up. And this cookware does clean-up quickly and easily, particularly when using Barkeepers Friend. I use plastic and wooden utensils (no metal) and they still look almost brand new after several months.
The copper band however does tarnish and discolor just as much and just as fast as a true copper pot or pan, so if you are fanatic, you will need to polish the tarnish away fairly often (at least every other week). However this is barely noticeable for us real world users, and Barkeepers friend does a good job of semi-polishing the copper (but it won't gleam).
I know, I know, they are SO expensive. But honestly, if you know how to cook or want to learn with responsive cookware, I honestly feel this is a great investment. I am wholeheartedly thrilled that I made it and cannot recommend highly enough.

I purchased this pan as a "second" at Marshalls for $119.00. Still have yet to figure out why it was a second as it is in perfect condition. In any event, this is a typical All Clad high quality pan. Still trying to determine if the "copper core" line is really that much different than the normal stainless line. I also own Mauviel copper cookware and there is a HUGE difference in heat control from that to the All Clad Copper Core. With the Mauviel the heat change is nearly instantaneous but with the AC not so much. All that said I own a ton of AC and love every piece, especially for the price because when you start to get into copper it's a whole new world of expense. This Windsor pan has a terrific shape for the reduction of sauces. It is very heavy and stays put on the stove. I think I will be very happy with this pan and I bet you would be as well. However, I feel lucky I got it for the price I did because the $295.00 price here seems too high for this pan in comparison to the stainless line of AC, and I'm just not sure there is much of a difference.

I nearly did not purchase this dutch oven because the base is only 10 in. in diameter and I was concerned that browning large items or large quantities would be difficult or time consuming. But there is something magical about this pot. Because of its shape, the interior browning surface is much larger than the exterior base would indicate. It is no problem to brown a 5 pound chicken on top of my stove and then cover it and put it in the oven for slow roasting (300 degrees) a delicious french style roasted chicken. Yes, this pot is terribly expensive, and since I do not have the all-clad short 8 qt. stock pot which has been given top rating as a stainless steel dutch oven by Cooks Illustrated, I could not say that this pot is superior. The stainless steel all-clad short 8 qt. stock pot is much less expensive. However, I am delighted with the shape of this pot and its performance. I treasure every one of my all-clad pots. I specially treasure this one and the incredible slow roasted chicken that comes out of it. All of the all-clad pots I have cook well, and they truly will give you a lifetime of good cooking and easy clean-up. All-clad pots have been my first choice gift for wedding presents for years. I have had Le Creuset and they are also exceptional pots with many loyal users but I personally was unhappy with the weight and the difficulty with cleaning the occasional accidental scorch as well as chipping.

I at first thought Coppercore was just a gimmick, with the gratuitous rim of exposed copper around the base, but I was wrong--this line is great: much heavier than their other lines, and, for what it's worth, attractive too. I have, at great expense, gotten two more of their pots.

One of the pieces I recieved was this 4-Quart saucepan. I love to use this to cook pasta for two, and it's the perfet size for making stock with one chicken carcass or a risotto for several. Love this pot!

When I started law school, I moved into a studio apartment with only microwave pots to cook in. After a year, I decided that some better form of food was necessary. I first got an All-Clad 1-quart saucier, and then I got this amazing pot/pan. I need nothing else. It warms quickly and evenly and cleans beautifully. At first I choked over the price but I bit the bullet and got it. The cost is, granted, about the same that one can pay and get a whole set, but I've had those inferior sets before. They've gotten thrown out in a year or two because they're worth exactly what I paid for them. Should I ever actually need another pot, I won't look at anything but All-Clad cop-r core.

I Love to cook... I'm an engineer by trade, Aerospace type. I escape to cooking for friends. I was using an old Grand Cuisine set that served my wife and I well, with copper bottoms only. We installed a new Wolf stove with large burners and the ol' Grand Cuisine was burning where the copper stopped. I was interested in the All Clad Copper Core because I like copper performance but don't like cleaning bare copper.
We bought this set at a local store. Be careful, all 10 piece sets are not the same. Some include different pieces. A higher price set could be a better bargain. You need to check the size of your pieces. The 10 piece set for was perfect for starter. My wife wants' three more pieces.
Performance: While I'm not a pro chef, I am an engineer. You can say what you want. I'm a people person too. We like it when our friends leave with full stomachs swearing they've had nothing better. This does not happen all the time, but when the beer and food hit the mark, it happens once in a while.
These pots ROCK. The pots distribute the heat as described. They are expensive. (Period) But you do get what you pay for in this case. These pots handle the big burners like they were made for them. Even the small pots. I need to put the small pot across the ring of fire to capture only a portion of the ring and they can melt butter evenly. (Period) Sauce, sage chicken, you name it. Because of the performance, they are easier to clean too. They have fewer hot spots than typical pots that would normally burn sections of food into the pan.
We are very happy, picky engineers. If a new set of cookware is a financial priority for you, get the copper core. (Period)

These are, I in my most humble opinion, the finest pots you can buy. They're solid, beautiful (if you're into pots) and well designed. If cooking is your passion, you can do no better. The internal copper core does an outstanding job of spreading the heat evenly and the interior and exterior stainless steel cleans up easily. The pots are even dishwasher safe although you may need to use copper polish to restore the bright finish of the exposed copper band if you do use the dishwasher.
Please note, the pots won't do the cooking for you so if you have no idea what you are doing in the kitchen, you can still burn dinner or turn out a lousy meal...but at least you will have done it evenly and in style! On the other hand, because they cook so well, they could make learning to cook or expanding your cooking horizons a joy.
A couple final notes. 1) The pots are heavy. All-Clad definitely did not skimp on the materials. Fortunately, for the heaviest pots, they have a secondary handle on the lip of the pot to help you lift. 2) They are expensive. I looked everywhere and could not find All-Clad discounted. Even retailers that carry the line are careful to exclude All-Clad when they have their big sales. That said, Amazon's price is as good as any, and with Amazon Prime, the pots were delivered to my door the day after I ordered them (all 54 pounds in one box) for only $3.99. 3) These are heirloom pots. I had a hard time reconciling paying so much for the set until I realized that we'll own these pots for the rest of our lives and that when we're gone, our children will continue to enjoy them.

You cannot beat All-Clad in the quality department. After using this pan for a week my family even noticed how my cooking was tastier. This pan does a fantastic job caramelizing meat and veggies. It heats very quickly and evenly. But it also cools very rapidly because the copper is a fantastic conductor of heat and cold. I like the copper core better because of the ease of maintenance. Just a little Barkeeper's Friend and it shines like new. The handle stays cool enough in most applications for me to use it bare handed. The sides are sloped just right to impress your friends with a little food flipping action. I've used it on both electric and gas stoves and was happy with the even heating of both. If you can swing the price you won't regret it.
