It looks like a very small refrigerator.
Every piece of sheet metal is sanded on the edges, no cuts from sharp edges.
Easy to put together, no more difficult than putting together a refrigerator.
Quiet as a refrigerator too.
Read the instructions and season it first as directed.
You will need extra wood pellets. It does not come with any in the box, so order some extras. Each pellet lasts about 20 minutes.Bradley Apple Bisquettes 48 pack
NOTE: you have to put at least 4 pellets in the stacker to get it to burn 1 pellet. Just the way it works. I put in two pellets and nothing smoked. It needs 4 pellets to push the pellets along the tray to the burner. Not a problem, just try to remember that 3 of the pellets won't burn. So, if you want to cook for 4 hours you need: 3 pellets per hours x 4 hours = 12 pellets + 3 pellets to get them to burn plate = 15 pellets.
I tested a Butterball Turkey Breast first. I followed the Bradley instructions in their cookbook Bradley Recipe Book Volume 1 for the turkey cooking temperatures. I used their glaze recipe under the skin. I also used a wireless remote meat thermometer Oregon Scientific AW131 Grill Right Wireless Talking BBQ/Oven Thermometer feed the probe wire through the roof vent of the smoker. I used the apple pellets from Bradley Apple Bisquettes 120 pack
I sat back and waited. A few hour later the Oregon Scientific AW131 Grill Right Wireless Talking BBQ/Oven Thermometer began to chirp "almost done" "Almost done". The wireless thermometer is great because I was smoking the week of Thanksgiving and it was in the 30's outside so not having walk out to the smoker to check the meat was ideal. (My wife was concerned about the smoker being able to maintain cooking temperature in the cold outside. This smoker was stable, the temperature stayed steady. the outside of the unit did not get hot to the touch, except around the smoke vent which is to be expected.)
I used a Taylor Analog Instant-Read Dial Thermometer to verify the temperature of the meat when the wireless told me it was done. Both thermometers were within a degree of each other.
I took the turkey breast out of the smoker and let it rest for about an hour. The color was extremely golden skin. Not black or Smokey but as if was dipped in golden lacquer. A gorgeous turkey breast. No burnt places, not excess smoke, perfect. When I carved the Turkey breast it was as moist as a wet sponge. Unbelievably tasty, nothing like store bought smoked turkey. The taste of the turkey was like that of caviar compared to fish sticks, it was rich, smooth and wonderful.
This smoking robot works. Just add a Oregon Scientific AW131 Grill Right Wireless Talking BBQ/Oven Thermometer to you don't have to walk outside and let it do its job.
Also, we ran the smoker on our back porch, about 10 feet from the house. It only exhausts a small amount of smoke while working. It did not look like a fire at the, just a little smoke, less than the steam from a tea kettle. If you cheat and peak while it is cooking you will get your clothes smoked and have to change for dinner, but the smoke from the smoker did not get into the house otherwise.
Easy to setup, easy to control and easy to cook with. Oh, the trays are 11x15 so you could put a 12-14 pound turkey in it. Next is a Roast, Ribs and some Cheeses. The Bradley Recipe Book Volume 1 also includes recipes for cheese, fruit, and more. Just follow the instructions and be patient. It can do both hot and cold smoking.

Works well. I assume its reading is representative of the temperatures. Color is not too bright and offensive. Looks good on black stove. You sometimes have to tap it to get it to give current temperature as it occasionally gets a bit hung up on its way up. Not the end of the world.

I have used the Xikar hygrometer for several months in various cigar humidors, and both the temperature and RH readings are extremely accurate (+/- few degrees or less) when compared against high-quality reference digital temperature and RH meters. The nicest feature is the simple calibration: let the unit sit in a sealed plastic bag with a small amount (15 mL) of moistened salt for 36 hours (many manuals specify 6-24 hours, but I have observed slow RH fluctuations of +/- 5 degrees during up to 24 hours - so I do 36 hours to be safe), and then push and hold the calibration button without opening the bag until the RH reading is a stable 75 F. Be careful not to accidently push the calibration button when handling the hygrometer (apart from calibration).

Having burned out, drenched, accidentally kinked, and destroyed enough Polder probes to fill an oven, I finally threw in the towel and went elsewhere for a digital probe thermometer. CDN's Proaccurate may finally be the end of my search for a worthy successor.
Digital probe thermometers are a godsend for cooks who like to set it and forget it when cooking. You want that steak done to exactly 145 degrees? The probe thermometer will tell you. Just stick it in the meat, set the finished temp, and let the beep tell you when it's exactly medium rare. When it works, this kind of thermometer is indispensable.
Therein lies the rub, though. "When it works...." Most of the digital probe thermometers on the market suffer from the same chink in the armor--their probes are flimsy. Not only are the wires inside the probe itself thin when compared with the braided metal housing that holds them, but they can't take the heat, either. Most probes top out at a little over 380 degrees. You run the risk of burning it out when checking oil temperatures, something every probe should be able to do. And if your oven cycles its heat on and off, you could have it set for 350 but it may vary between 300 and 400 while cooking for twenty minutes or more. The result is a cooked probe.
But not with the CDN Proaccurate. The probe cord itself is significantly thicker (fifty percent or more, from my guess) and the temperature tops out almost a hundred degrees higher than the other guys at 482. Plus, unlike the other guys, this unit carries a full five year warranty--including the probe. You can't find that in any other digital probe thermometer I've seen.
Pros:
* Probe withstands highest heat I've seen offered--482 degrees F--and is far more hefty than competitors
* Meat selector settings (Chicken, Beef, Lamb, Turkey, Pork, Veal) with doneness levels
* Accurate. Approved for Food Service Industry usage
* Twenty-four hour count down and up timer

* Includes wall mount, magnetic attachment to metal surfaces, and is free-standing
* Good price point
* Five year warranty
* CDN was swift in answering e-mailed questions I had about the unit
Cons:
* No seconds displayed on timer
* Design won't be confused with anything coming out of Europe :-)
* Non-intuitive operation on a couple functions
* Plastic case is not heat-resistant
* Tiny indicator makes it hard to tell if the unit is running when using timer
* Alarm is not as loud as other units out there
* Probe still prone to water damage (no dishwasher)
* Hard to read times less than ten minutes due to shadow of case on digits near the right side
Overall, as a new user my review is positive. Time will tell concerning ruggedness, but I am hopeful given the clear difference in probes between the CDN and other units out there. This CDN model is almost worthy of five stars, but the lack of seconds on the timer is a bad design decision from my point of view. I know from experience with other units that watching those seconds roll by gave me some assurance from a distance that the timer was running.
So for all you Polder and Taylor users who are exasperated with probe failures on your thermometers, this CDN may be what you've been looking for.
