Zojirushi NH-VBC18 10-Cup Rice Cooker and Warmer with Induction Heating System Review

I purchased my Zojirushi Magnetic Induction Rice Cooker because I wanted a first rate cooker. I knew that I would be getting a high-quality product simply because it is 100% engineered and manufactured in Japan. I was also curious how the "Magnetic Induction" worked and what benefits it provided over traditional heating coil-based cookers.
As it turns out, the magnetic induction thing is very, very nice. There is no heating coil at the bottom of this cooker. Instead, magnets are cycled on and off around the pan causing it to heat up perfectly evenly. The thing that amazed me about this cooker is that the traditional "skin" of browned, crusty rice always found at the bottom of other cookers is totally absent. Every single grain of rice you put in is wonderfully cooked coming out.
While this cooker has a large capacity, it handles small quantities wonderfully. As a single bachelor/student, I can't say enough how nice it is to be able to cook only a single cup of rice when I need it. In traditional coil-based cookers, if you want a single cup of rice, you have to cook one and a half or two, because quite a bit becomes crusty/burned at the bottom of the pan. Not with this cooker!
I also have yet to come across a variety of rice that this cooker could not handle. I've used it to cook aromatic Indian basimati rice, wild rice, rice for sushi, Asian white rice, and wild rice medleys. Every single one has come out perfect.
Clean-up is a breeze. The pan simply lifts up and out with two nice plastic handles; they're cool to the touch... no oven mitts required! The non-stick is the highest quality I've ever encountered. It feels as though the inner pot is armor plated. One swipe, a rinse, and it's ready to go again.
To be sure, this cooker is at the high end of the price scale. Having said that, in light of the build quality, cooking excellence, and ease of cleaning... it was worth every penny!

I recently purchased this product from an Amazon merchant and love it! Since I've started incorporating more whole grains into my diet, and being a rice-lover, this item appealed to me from all I'd read, and the GABA rice setting is what really sold me. I've successfully used it to cook Lundberg short grain brown rice on the GABA setting, hulled barley on the GABA setting, organic millet, and whole oats on the GABA setting. There aren't instructions that specifically direct you as to how to cook these particular grains using this product, and the barley I cooked needs to have the amount of water I used the first time tweaked for perfection, but I'm really excited about having the use of this rice cooker for other whole grains. I intend to try whole buckwheat next. One thing that is very nice about using this gadget is that there is no wasting of water lost to steam from over-boiling in order to thoroughly cook these grains. I highly recommend this product for people, like me, who dedicate a large portion of their dietary needs to whole grain consumption... just experiment with the amount of water until you get it just the way you like it, and remember that less water than you'd ordinarily use will probably work with this machine. You just add the grains and water, set it appropriately, and let it do its thing! It shuts itself off automatically at the end of its cooking cycle, and keeps the grains warm, moist and unburnt, until you're ready to eat them.

We thought we knew what rice was supposed to be like when we used our Costco Aroma Rice Cookers--we would just, as a matter of course, replace the old ones with the same brand... Until this time.
After reading up on consumer reviews and Japanese sites, we opted to try the Zojirushi Induction Heating Rice Cooker. The stainless steel is STUNNING--the pictures do NOT do it justice--it is gorgeous on my countertop--a piece of furniture, like the KitchenAid Mixer. It is easy to set up (clock time, etc) and easy to use. (The directions are very clear.) I tried some Jasmine Rice in it for our first try--and WOW! I was totally amazed! Each piece of rice is perfect in every way. I have never had such results before. Perfect temperature, perfect texture, perfect stickiness, perfect taste. The aroma in the kitchen fills the house and it's wonderful.
There is very little steam (unlike most rice cookers) and it is very easy to clean up. It keeps the rice at that perfect temperature for hours--even longer with the extended warm feature.
I know it's expensive--but in this case, I truly believe you get what you pay for. If you want to know what rice is supposed to be like--you must get one of these! Zojirushi makes a couple of different types of rice cookers--and I have heard that they are all terrific. This one cooks with induction heating, which uses magnets... the unit doesn't get hot...
If you can--get this one!

We purchased this rice cooker last week, and have used it twice for brown rice. The rice came out better (and with less effort on our part) than any other cooking method we've ever used. It was, in short, the best brown rice we'd ever had anywhere.
We also tried out the warming function, in which the machine keeps rice warm for up to 12 hours on normal warm mode--there's also an extended warm mode for up to 48 hours. After about 8 hours on warming mode, the rice was virtually the same as when it had just been cooked.
The machine could not be easier to use. Build and material quality appear first rate. The rice pan is heavy duty--same for the non-stick coating. Very quiet in operation, very easy to clean. All sorts of little details that suggest many cycles of refinement in the design. Aesthetics are delightfully Japanese. The stainless steel side and top panels appear as an afterthought designed to fit Western tastes.
One thing I haven't seen anyone else mention about Zojirushi rice cookers. On the last page in the owner's manual there's a footnote which suggests vaguely that this rice cooker may not function well at high altitude. Since I live in Santa Fe at 7,000 feet, I called Zojirushi USA and asked about this. They told me that their rice machines do not function well above 3,000 feet, and that I should return the machine I purchased. Well, instead, we tried it at better than double its supposed elevation limit, and as mentioned above, it worked perfectly--so it's hard to imagine that it might work MORE perfectly below 3,000 feet. Suffice it to say that if you live in Denver, Albuquerque or Santa Fe, you can ignore Zojirushi's disclaimers about poor function at higher elevation.
All in all, this is a superb product that combines the otherwise mutually exclusive benefits of perfect rice with set and forget automation. The folks at Zojirushi USA (aside from their apparent ignorance about cooking rice at altitude) are informative and friendly. We tend to buy the best kitchen equipment we can find just to avoid the hassles of unreliability. Accordingly, we're difficult to please, and this machine meets our (very high) standards.
LONG TERM USE UPDATE (January, 2009):
This machine has continued to function flawlessly. Apparently Zojirushi induction rice cookers aren't well known in northern New Mexico, since whenever we have a dinner party and rice is on the menu, our guests are always intrigued by this thing, and regularly end up buying one of their own.
One clarification: the cooking bowl is stainless steel, as is the inside cooking bowl cover. Apparently these parts tend to be aluminum on the vast majority of computerized rice cookers, even those from Zojirushi. The bowl is coated in some sort of very heavy duty anti-stick coating--after a year or two of use, the coating still looks new--it hasn't started flaking off at all. I would guess that boiling water (which is basically what rice cookers do) isn't too hard on the coating, and we're probably not poisoning ourselves, the way we might be if we used non-stick pans (which we don't).
Reference my comments above about Zojirushi rice cookers working perfectly at high elevation (which was news even to Zojirushi), I've since heard that high elevation performance may be better with induction rice cookers than with computerized rice cookers with standard heating elements. Who knows. What is definite, however, is that as of this writing this machine has functioned perfectly at 7,000 feet for almost two years.

Even though I felt the low price on this cooker was suspect, I thought I would give it a chance. I wasn't expecting it to last long or work well - boy was I wrong!! I have used it several times a week for going on three years now, and it's still working flawlessly - try to say that about, well, probably any other small applicance in your entire kitchen.
Everyone should have a rice-cooker - they're great time-savers, not to mention meal-savers. Even people who can't boil water can make perfect rice every time.
The reasons I love my Aroma cooker in particular are:
1) It makes much less mess than others I've used (rice cookers tend to blurble starchy water around the rim while cooking, but the heavy glass lid of the Aroma, and the vent hole, keep it from spattering the counter)
2) It shuts off automatically when it's done cooking, regardless of the type of rice used (I still have no idea how it "knows" there's brown rice that needs a longer cooking time in there, as opposed to jasmine rice which cooks faster - but it does!)
3) It keeps the rice warm for hours if necessary without burning on the bottom or drying out
4) The inner pot lifts out easily to clean.
If I ever have to replace this little workhorse, I'll definitely replace it with another Aroma. (I hope by then they make one in red!)

We received this rice cooker as a Christmas gift and replacement for one broken on our move back from Korea. Immediately, we had issues. I found it almost impossible to make decent, wet or sticky rice without burning the bottom. The warmer feature always burned the bottom, making it useless. After a month or so, the seal on the lid broke, unexplainably, and we had to jury rig it to make it work. Finally, in May, the whole thing just quit working one night. We make a lot of rice and maybe this thing wasn't meant for every or every other day use. I don't know, but I do not recommend it!

This is a really great, basic rice cooker. It doesn't have the bells and whistles of the more expensive rice cookers (no warming feature, no different settings, etc.), but it works well for cooking rice, it's compact, and reasonably priced. Prior to buying this one, we had another basic model made by another company that broke. We replaced with an identical one, and it broke as well. After going through two rice cookers, we decided to pay $5 more to get a different brand- this Panasonic. We have had no problems with it, and we also like the non-stick pot. With our old rice cooker, the rice would stick to the bottom of the pot, so we couldn't eat all of it. The Panasonic doesn't have this problem, so we can make smaller quantities of rice without wasting most of it. I have made white rice, brown rice, and quinoa in the rice cooker, and all have turned out well.
