Viking VSC0135 3-1/2 Quart Stainless Steel Reduction Sauce Pan Review

This pan was my first Viking piece. We bought this just before Thanksgiving 20009. I was considering other cookware and bought a piece of the best known high-end cookware. The next day I returned the other brand because if you compare Viking to the other brand, there really is no choice. I have my Viking over a year now. I have added 6 other pieces so far. I make syrups and carmel in this pan. The pan always cleans-up beautifully. It almost looks as though it has not even been used, I do have to use Bar Keeper's Friend ever time I wash the pan but the results are flawless. Everything comes out perfect and it cleans beautifully. The entire Viking cookware line is gorgeous and sturdy.

Viking Nonstick Fry Pan Review

this is the best skillet I have ever owned. I've been using this skillet for about a month now and find it to be the best. The height and angle of the handle is great. The handle never gets hot. The pan itself is nonstick and supposedly dishwasher safe (I still haven't put it in the dishwasher, I always hand wash it). The only issue might be that it's too heavy to lift with one hand for some people.

Viking 7-Ply Stainless 3-1/2-Quart Reduction Saucepan Review

The company sent it right away and it was in good condition. This saucier seems to heat more evenly than the all-clad saucier and the handle is much more sturdy. My wife, who is a bit short, has difficulty with the height of the handle, but she also had some difficulty with the all-clad handle. The pan is one that we use often and really enjoy. I might have purchased the 2 quart instead, but I was thinking that I could do more with the bigger size. This is true, but it is a bit large for my daily oatmeal - although I still enjoy use it for that.

Demeyere Atlantis Conic Sauteuse Pans Review

Demeyere Atlantis Conic Sauteuse Pans

This is my third piece of Demeyere cookware, so I expected top quality. Unfortunately, I am disappointed with the surface finishing of the interior sides. Though not a major defect, I consider this pan a "2nd" or irregular.
There are very slightly rough concentric rings going around the interior, beginning where the curved sides start, but mostly near the top on the side opposite the handle. If I take my fingernail and rub along the side from top to bottom, I can feel the rings. It is not perfectly smooth like the bottom. Very small, blunt burrs of metal stick out here and there. Perhaps the tool dye used to press the pan shape needed cleaning or replacing before this piece was made, or the operator did not thoroughly polish the pan after it was pressed?
Demeyere's 30-year warranty does not seem to cover this defect. The warranty states: "Scratches to the inside or outside of the stainless steel are not considered production errors."
Oh well, that is disappointing. Anyway, though I expected better quality, it is not enough of a problem to bother with packing and shipping it back to Amazon.com, and I did manage to buy it at a 20% discount (Normal price is $320.) The rest of the pan and the lid are essentially perfect.
I could have inspected it before purchasing if I had bought it locally -- albeit at a higher price, plus tax. Since it was Demeyere, I wasn't worried about buying online and assumed that their quality control would not allow a pan with this defect to be sold.
For smoothing out the interior surfaces, I may try some light sanding with 2000 grit wet/dry sandpaper, and/or use some 0000 steel wool.
I have been using the 4qt. Atlantis saute pan for a few years and really like it. I recently bought the wonderful Apollo ProLine 12.6" fry pan locally when I purchased a Miele 30" induction cooktop, which is far superior to the gas cooktop it replaced. I highly recommend the Miele.
I initially thought I would purchase several more Demeyere cookware pieces to go with the new cooktop. However, I am not sure about that, given the considerable expense, and my lackluster experience with this latest piece. Now I will look at alternatives.
Cheers, and have fun cooking and eating with friends and family!
UPDATE 12-10-10: My son pointed out how easy it is to return an item with Amazon.com, so I exchanged it for another one shortly after writing the initial review. Unfortunately, the second sample had the same interior finishing defect. Then, I saw that the Atlantis conical sauteuse pan on display at the shop where I bought the Miele cooktop also has the rough interior. To top it off, neither Demeyere.be nor the US distributor answered my e-mail after giving them ample time to reply. So, I gave up and returned the 2nd one for a refund.
Amazon.com was very fast and cooperative with both returns. I will not be buying any more Demeyere cookware, however, I remain happy with the Atlantis saute and Apollo Proline fry pans. Both are truly excellent.
I purchased the CIA Masters Collection 3 qt. saucier from Amazon.com at less than 2/3rds the price of the Demeyere piece. It performs fantastically! It has full curved sides and a comfortable handle. I think I will get a lot of use out of it and am now considering their regular and nonstick frypans, and perhaps the 2qt. saucier.

Marcus Samuelsson 10-Piece Stainless Steel Cookware Set Review

Marcus Samuelsson 10-Piece Stainless Steel Cookware Set

I purchased the 10-piece stainless steel cookware set and a 10" open stock skillet about one month ago. My wife and I have been very pleased with this cookware. Our previous cookware was Calphalon Commercial Hard Anodized, made in Toledo, Ohio. We were very pleased with the Calphalon cookware. In fact we have given those pots and pans to our sons for their own kitchens. However, I wanted to switch to multi-ply stainless steel cookware for some time. Our previous hard anodized aluminum cookware responded very quickly to changes in temperatures. However, my wife and I have found that multi-ply stainless steel heats up and cools down slightly slower than hard anodized aluminum. In fact these multi-ply pans retain heat more like cast iron. Following the directions to use medium heat settings has given us very good results. Soaking in water and using Bar Keepers Friend stainless steel cleaner has made clean up very easy.
It was very important for me to purchase cookware made in the U.S.A. or to be more accurate, I wanted to avoid "Made in China" cookware. I'm not opposed to Chinese cookware. I just have found, in my research, that current Chinese made cookware lacks consistent quality control. I considered All-Clad stainless steel, however the price was prohibitively high. When I discovered Marcus cookware made in U.S.A. by Regal Ware, I was excited that the price was easier on the wallet. I had some questions about this cookware and sent emails to Regal Ware. Chris Robason, National Sales Manager for Regal Ware, answered each of my emails very promptly. He assured me that Marcus Cookware, including the lids, were made in West Bend, Wisconsin. Also, he informed me that Regal Ware is going to add open stock pieces to the Marcus/Unity line of cookware. The Regal Ware website already shows a new 12" saute pan has been added to this line of cookware.
The Marcus/Unity cookware is very high quality. The stainless steel, aluminum tri-ply construction heats evenly, is very sturdy, and has good, balanced weight. The brushed, stainless steel handles are very comfortable. I really like the helper handles on the sauce pans. The lids fit very well and have enough weight to sit firmly on the pans. Also, knowing that Regal Ware is going to add more pieces of cookware to the Marcus/Unity line shows their commitment to providing quality, reasonably priced, American made products. The only improvement I would recommend, is to add a rolled edge to the pans for easier pouring.
**Update** The Marcus Cookware by Regal Ware has been replaced by American Kitchen Tri-Ply by Regal Ware. I was informed by Regal Ware, that the new American Kitchen Tri-Ply cookware is identical to the Marcus Cookware. I noticed on the Regal Ware website that a 12" / 30cm Covered Sauté Pan, a 3 QT / 2.8L Covered Every Day Pan, and a 3 QT / 2.8L Steamer insert has been added to the new American Kitchen Tri-Ply collection. I also noticed that the 2 QT / 1.9L Covered Sauce Pan no longer has a helper handle that was on the Marcus cookware version of this pan. In my opinion, the lack of a helper handle isn't really necessary on this small pan.
